with fondant potato, pickled pears, cocoa sauce

Fillet of Collington’s beef

with braised cheek, pomme purée and oxtail jus

Old Dalby Pheasant

served with slow roasted parsnip, black trompettes, foie gras and tarragon jus

Butter roasted turbot

with veal shin risotto and Scottish langoustines

Beetroot and ricotta gnocchi

served with horseradish velouté

Pan fried fillet of wild seabass

with chorizo purée, basil crushed potato and sauce vierge

 

Dessert

Christmas pudding soufflé

with roasted chestnut ice cream, brandy butter foam

Tonka Bean crème brûlée

with a cherry flapjack and cherry sorbet

Mulled wine poached pear

with blue cheese and walnut ice cream

Hazelnet and Valrhona chocolate tart
